While winter vegetables are more suitable for warming meals such as stews, soups or casseroles, in early summer, fruits and berries with their cooling effect (and rather high sugar content) charge us with energy to counteract spring tiredness. Vegetables that grow in summer provide us with additional beta-carotene to protect us from harmful sunlight.

Only when local farmers can harvest large quantities of products (because they are seasonal and therefore abundant) are storage and transport costs eliminated.
